Salty, bright, and earthy. Unlike a milder cheese such as our Gouda, our Blue has bold flavor that likes to be front-and-center in any dish or pairing. There's no mistaking the taste of Azael blue!  We've been told it's some of the best blue our customers have had and hence, they come back every year for more!
