Our Oaxaca (it's pronounced wa-ha-ka) is said to be tastier than other versions of Oaxaca most people have tried in Mexico.  Oaxaca cheese has mild, earthy flavor like a young monterey jack. Its light flavor and texture make it a favorite of children  - comparable to string cheese in consistancy!
